Paul began his formal training with the Marine Catering Core. After four years he left the services to pursue his catering career and joined the Ambassador Hotel in Kill, Co. Kildare. Paul later joined the Ibsen Group as Head Chef where he worked in many Restaurants. |
| Paul later moved to the Prestigious Old School House Restaurant where he developed his style of Irish / French cuisine and became a member of Euro Toques and one of the Five Chefs Of Fingal. Paul has won many awards for his fine Food and has been praised by the media on several occasions. Paul rejoined the Ibsen Group as Executive Chef / Director for Purple Ocean in May 2004 and now in May 2009 he has been appointed Managing Director of Purple Ocean Restaurant.

 | Ronan Foy Deputy General Manager
Ronan began his career in hospitality whilst living overseas, firstly as a manager of a number of bars and then went on to open and manage two restaurants in Queenstown and Dunedin, New Zealand. |
| Upon returning to Ireland, Ronan began working as an assistant manager in Purple Ocean from March of this year.
